Turkey Thaw and Roast Planner (Work Back From Dinnertime)
On this page
Pick your mealtime, enter the turkey's weight and how you will thaw it. The planner works backward through resting, roasting and thawing, using the USDA's tables, and gives you a dated schedule.
How the plan is worked out
- Resting. The USDA advises letting the turkey stand 20 minutes before carving, so the turkey comes out of the oven 20 minutes before mealtime.
- Roasting. The planner finds your weight in the USDA roasting table below and counts back by the longer time in that row. Starting early is safer than serving late, and you can keep a finished turkey warm while it rests.
- Thawing in the refrigerator. The USDA allows about 24 hours for every 4 to 5 lb. The planner uses 4 lb per day, the slower end, rounded up to whole days. A turkey thawed in the refrigerator can stay there 1 to 2 more days before cooking, so finishing early is fine.
- Thawing in cold water. About 30 minutes per pound, with the water changed every 30 minutes, and the turkey cooked right after it thaws. The planner ends the thaw at oven time.
- Cooking from frozen. It is safe to roast a frozen turkey, but it takes at least 50% longer, and the giblet pack has to come out partway through.
Worked example
A 20 lb unstuffed turkey, dinner at 4:00 PM on Thursday, November 26, 2026, thawed in the refrigerator:
- 20 lb sits on the line between the 18–20 lb and 20–24 lb rows, so the planner uses 20–24 lb: 4½ to 5 hours.
- Out of the oven: 4:00 PM − 20 minutes = 3:40 PM.
- Into the oven: 3:40 PM − 5 hours = 10:40 AM.
- Thawing: 20 ÷ 4 = 5 days, so it goes into the refrigerator on Saturday, November 21.
USDA roasting times at 325 °F
| Turkey weight | Unstuffed, 325 °F | Stuffed, 325 °F |
|---|---|---|
| 8 to 12 lb | 2¾ to 3 hours | 3 to 3½ hours |
| 12 to 14 lb | 3 to 3¾ hours | 3½ to 4 hours |
| 14 to 18 lb | 3¾ to 4¼ hours | 4 to 4¼ hours |
| 18 to 20 lb | 4¼ to 4½ hours | 4¼ to 4¾ hours |
| 20 to 24 lb | 4½ to 5 hours | 4¾ to 5¼ hours |
These times are approximate. The turkey is done when a food thermometer reads at least 165 °F in the innermost part of the thigh and wing and the thickest part of the breast. If you stuff the turkey, the center of the stuffing must also reach 165 °F.
USDA thawing times
| Turkey weight | In the refrigerator (40 °F or below) | In cold water (change every 30 min) |
|---|---|---|
| 4 to 12 lb | 1 to 3 days | 2 to 6 hours |
| 12 to 16 lb | 3 to 4 days | 6 to 8 hours |
| 16 to 20 lb | 4 to 5 days | 8 to 10 hours |
| 20 to 24 lb | 5 to 6 days | 10 to 12 hours |

Never thaw a turkey on the counter. Keep it in its wrapper on a tray in the refrigerator, or in a leak-proof bag in cold water.
